Quality and authentic ingredients make this simple salad an excellent side or main dish. Drizzled with a Greek dressing and served alongside pita bread and dips of hummus and tzatziki is our favorite way to enjoy it.
STEP ONE – Preparations
- Get out a large salad bowl and a small bowl.
STEP TWO – Make the Salad
Ingredients:
5 cups chopped romaine lettuce
1 large chopped bell pepper
1 cup halved grape tomatoes
½ cup chopped cucumber
½ cup halved Kalamata olives
¼ peeled and minced red onion
¼ cup crumbled feta cheese
Instructions:
- In the large salad bowl, combine the lettuce, pepper, tomatoes, cucumber, olives, onion, and cheese.
STEP THREE – Make the Dressing
Ingredients:
¼ cup red wine vinegar
¼ cup fresh lemon juice
3 tablespoons extra-virgin olive oil
1 teaspoon minced garlic
½ teaspoon Dijon mustard
½ teaspoon dry oregano
½ teaspoon fine sea salt
½ teaspoon ground pepper
1 tablespoon finely chopped fresh parsley
Instructions:
- In the small bowl, combine the vinegar, lemon juice, oil, garlic, mustard, oregano, salt, pepper, and parsley.
- Dress the salad and gently toss to incorporate.
Recommended Serving Size: ¼ of salad
Exchanges: 2 veg, 2 fat
A delicious light supper.

I really love Greek Salad, If you can, try to dress it withan extra virgin olive oil from the Mediterranean basin (doesn’t matter which country – they are all good). The perfume is fantastic…
