Fruit Tart

European in origin and similar to their savory cousin the quiche, tarts have a shortcrust, flavorful filling, and beautiful topping, usually of fresh fruit and a sweet glaze. This open-faced pie is sophisticated, stylish, and bound to impress.

STEP ONE – Preparations

  1. Preheat the oven to 375°F.
  2. Take out a stick of butter, a bar of cream cheese, and containers of sour cream and heavy cream to come to room temperature.
  3. Get out a food processor and a 10-inch tart pan (or another shallow pan similar in size).
  4. Get out a stand mixer, a small pot, and small bowl, and a serving plate.
  5. Set up a cooling rack.

STEP TWO – Make the Short Crust

Ingredients:

6 tablespoons unsalted butter
1 cup all-purpose flour
2 tablespoons white sugar
2 tablespoons sour cream

Instructions:

  1. In the food processor, blend the butter, flour, sugar, and sour cream until incorporated.
  2. Use your hands to firmly press the mixture into the tart pan.
  3. Bake for 15 minutes until lightly browned around the edges.
  4. Cool the crust on the cooling rack for 20 minutes.

STEP THREE – Make the Filling

Ingredients:

1 cup heavy cream
8 tablespoons cream cheese
2 tablespoons sour cream
3 tablespoons white sugar
2 teaspoons vanilla extract

Instructions:

  1. In the stand mixer with the whisk attachment, cream the heavy cream on medium speed for 2 minutes.
  2. Add the cream cheese, sour cream, sugar, and vanilla and cream for another 2 minutes until smooth and silky.
  3. Spoon the filling into the crust and distribute evenly with a spatula.
  4. Chill in the refrigerator for at least 30 minutes.

STEP FOUR – Make the Glaze

Ingredients:

½ cup apple juice
¼ cup sugar
1 tablespoon cornstarch

Instructions:

  1. In the small pot, heat the apple juice over medium heat.
  2. In the small bowl, combine the sugar and cornstarch.
  3. Slowly whisk into the heated juice and cook until thick like syrup.
  4. Remove the pot from the heat and let cool.

STEP FIVE – Assemble the Tart

Ingredients:

2 cups mixed and sliced fresh fruit and berries (strawberries, raspberries, blueberries, blackberries, kiwi, mango, peaches, etc.)

Instructions:

  1. Carefully transfer the chilled tart from the baking dish to the serving plate.
  2. Creatively arrange your choice of fruit on top of the filling.
  3. Drizzle or brush the glaze over the fruit and serve cold.

Recommended Serving Size: 1 slice (⅛ of tart)
